A refreshing Burrata e Prosciutto Crudo Stagionato 18 Mesi pairs creamy burrata with 18-month-aged prosciutto, cherry tomatoes and peppery arugula to create a harmony of textures. Truffle lovers will relish Fettuccine al Tartufo e Parmigiano, a velvety Parmigiano-Reggiano sauce laced with black truffle and crowned by a crisp parmesan tuile.

The menu continues with delicate Tortello di Ricotta al Pomodoro e Basilico, where handmade pasta envelopes rich ricotta in a zesty cherry-tomato embrace, and Filetto di Branzino e Carciofi Fritti, showcasing pan-seared sea bass alongside crispy fried artichokes. For the grand finale, the Torta Caprese—a flourless almond cake topped with crema Pasticceria, caramelised hazelnuts and chocolate brittle—arrives with a scoop of limoncello mascarpone gelato, all drizzled with premium Frescobaldi olive oil.

Once per sailing, Sabatini’s Italian Trattoria hosts an intimate Grand Tuscan Dinner, a six-course odyssey through Tuscany’s culinary landscape. The evening begins with Carpaccio Di Mare Mediterraneo, a delicate carpaccio of tuna and scallops accented by caviar and black truffle. Next, Branzino Con Caponata alla Siciliana marries seared sea bass with tangy Sicilian caponata, drizzled with basil oil. Sweet traditions follow with Pinolata Senese, a light Tuscan pine-nut cake, and finish with Cantucci Biscotti Con Grappa di Vino Luce—almond biscotti to dip in grappa. This exclusive dinner carries a cover charge of USD 99 (approx. AUD 147) per person, offering an unforgettable feast paired with fine grappa and select Frescobaldi wines.
